Ingredients

  • 2 plums (halve and pit)

  • 2 apricots (halve and pit)

  • 2 peaches (halve and pit)

  • 750 ml rose

  • 1/2 cup coconut rum

  • 1/4 cup superfine sugar

Instructions

  1. Grill fruit (plums, apricot and peaches) over medium-high heat, turning occasionally, until slightly charred (about 4 minutes).

  2. Transfer fruit to a cutting board and cut into large pieces.

  3. Transfer fruit to a pitcher and add rose, rum and sugar.

  4. Refrigerate overnight.
